Vegan Hot Dogs and Beer

It’s an easy meal: vegan hot dogs (I’ve tried both Lightlife Smart Dogs and Soy Boy Not Dogs—both are great). Boil for 4 minutes and while they’re cooking, make a mix of light mayo and ketchup (2:1) with a little dill relish. Smear the cooked dogs with the Reuben dressing, pile on the sauerkraut, top with a slice of dairy swiss or vegan gouda and microwave for about 1 minute. A great side dish is a sweet potato salad: cube a sweet potato and then cook in an air fryer at 400 degrees for about 12 minutes. (Spray the cubes with olive oil and then sprinkle with salt or something else–I like Penzey’s Northwoods spice mix—before you cook.) Once the sweet potatoes cool, mix with some light mayo and add some finely chopped Vidalia onion. Serve with light beer. Yum!
