I recently had dinner with my friend Nancy. Farro and salad. Was it so satisfying because of the food or the conversation? I’m not sure. Honestly I had forgotten about farro–my husband tells me I used to make it, but then I stopped from some reason. Was it because I stopped doing my own shopping (curbside pickup only) during the pandemic? In any case, the next time I went grocery shopping I picked up a bag of farro, and last night I threw a half cup of the dried grain into the rice cooker, not sure it would work. It did, actually. And then I braised a container of baby spinach, kale, and chard in olive oil with slivers of half of a dozen cloves of garlic, and cut up a head of cauliflower, tossed the florets in a mix of smoked paprika and and garlic salt, spritzed them with olive oil spray, and microwaved them for 5 minutes, Then I put the cauliflower in the air fryer. Voila. A simple but satisfying plant-based dinner.
